How Decaf Coffee Is Made—and How It Differs From Low-Caffeine Varieties
On a bag, decaf usually means most of the caffeine was removed from green, unroasted coffee, then the beans were dried and roasted like any other lot. Current processes do not reach zero caffeine, and it is not the same as a variety that is genetically lower in caffeine. The common industrial routes are water, solvent, and carbon dioxide.

What the bag name is pointing at
Decaf, decaffeinated, or a similar bag word usually does not mean the variety in that bag is genetically lower in caffeine. It means most of the caffeine was taken out of green, unroasted coffee, then the beans were dried and roasted like any other lot.
The work has to happen before roasting. If you roast first, the aromatics that develop during roasting would leave with the caffeine.
No current process reaches zero caffeine, and it is still hard to dissolve only caffeine without taking other solubles with it. The National Coffee Association says decaffeination typically removes about 97% of the caffeine. An 8-ounce cup of regular coffee is often about 95 milligrams; after processing, about 2 to 15 milligrams remain. USDA reference data put brewed decaf at about 1 milligram per 100 grams, or about 2 milligrams in 8 fluid ounces. The Conversation cites about 7 milligrams remaining. Those are different source figures, not one lab result for every bag.

It is not a low-caffeine variety
A low-caffeine variety is lower because of the plant. The named arabica you often see is Laurina, also called Bourbon Pointu. Literature often describes these varieties as having about half the caffeine of other arabica cultivars. That is genetics, not a later industrial step.
Decaf is a later step on green coffee. A lot can be a named variety and later decaffeinated; the two labels still answer different questions.
It is also not a cherry process in the washed, natural, or honey family. How fruit becomes green coffee belongs to processing. Decaf happens after that green coffee already exists.
Three common methods

Solvent methods use methylene chloride or ethyl acetate. Producers can put solvent on the beans, or they can move solubles into water first and treat that water. The Conversation describes this route as removing about 96% to 97%. A sugarcane-process label usually means ethyl acetate, which can be made from fermented sugarcane; industrial ethyl acetate is not always from cane. Treat that as marketing language, not proof that “natural” tastes better.
Water processes use water and carbon filters. Swiss Water® is a Vancouver company trademark: water, Green Coffee Extract, and carbon. The company describes its coffee as 99.9% caffeine free. The Conversation puts Swiss water at about 94% to 96% caffeine removal, and water processing is not limited to this one trademark.
Carbon dioxide methods date from the early 1970s. High-pressure CO₂ is relatively selective for caffeine. The Conversation records removal around 96% to 98%. The equipment is expensive, and supermarket decaf often takes this route.
Because other solubles leave with the caffeine, cupping notes on older commodity solvent decaf often call it flatter and more muted. Specialty lots more often use water, CO₂, or ethyl acetate. That is a common current approach, not a ranking of which method tastes better.

How to read the name on a bag
Treat decaf as an extra step on green coffee, not a substitute name for washed or natural coffee, and not a low-caffeine variety.
Bags often skip the method. Missing Swiss Water does not mean water was unused. A solvent or sugarcane label does not decide whether the cup will taste flat.
In the EU, soluble coffee labeled decaffeinated has an anhydrous-caffeine cap of 0.3% of coffee-based dry matter.
